Our Pacamara hails from the Finca La Nueva Esperanza farm in the Alotepec-Metapán region of El Salvador. This is a bean is honey processed, which means it is picked ripe, de-pulped, and fermented in sacks for 14–18 hours before being laid out on beds for 13–20 days to dry. The cup has a bright, fruit acidity with honey and toffee notes, making for a very complex flavor profile that will surprise your palette.
