Bean Profile
Our Pacaya comes from the San Vicente Pacaya region of Guatemala, near the Pacaya volcano. This area has multiple micro-climates that are perfect for coffee production. Weather is hot during the day but it cools down during the night providing an excellent opportunity for the coffee beans to develop complex chocolate notes.

Farm/Farmer: Perea Family and Ramirez Family Farms.
Varietal: Catuai, Pache-San Ramon, Bourbon.
Processing: Washed and patio dried.
Elevation: 5200-6000 ft.

Roast Level
We source high-quality coffees and we go to great lengths to roast each origin the perfect amount to showcase and highlight the bean’s natural qualities and flavors. In general, our roasts are what most people consider “medium.” Some origins taste better at a light roast, and some origins taste better at a darker roast. Our Head Roaster, Maury McCown, is Specialty Coffee Association certified and trained, and he strives to make sure you get the best the bean has to offer.
